Single-source raw honey

Single-source raw honey is honey harvested from one producer's own hives and packed without blending or heat treatment beyond what is needed to bottle it, so it keeps the character of a specific apiary and season.

Why it matters

Blending averages honey out. Single-source keeps the apiary and the season legible in the jar.

What it does not mean

Raw does not mean unfiltered of wax and debris, and it is not a health category.

How it is made, and how to tell

Comb is uncapped, spun, strained and packed. Heat is limited to what is needed to bottle it, which is why raw honey sets and crystallises in the jar.
